Why should the cutting board be classified?
1. Raw food and cooked food should be separated. Kitchen knives and cutting boards are the direct contact of food. When cutting raw food, bacteria in the food will remain on it, and there are more bacteria and parasite eggs on lettuce. If it is subsequently used to cut cooked food, the bacteria will directly contaminate the cooked food through the medium of kitchen knives and cutting boards. Even if it is “sterilized” by scalding it with boiling water before use, the bacteria are often not completely eliminated. Therefore, to ensure food safety, two kitchen knives and two cutting boards should be prepared at home and used separately. And it is safer to cook it in boiling water before cutting cooked food.
2. Keep the cutting board clean After the cutting board is used, use a hard board brush and clean water to wash off the dirt together with the sawdust. If there is fish, meat and other fishy smell, it can be washed with rice water or washing spirit dissolved in salt, and then washed with warm water. Do not scald with boiling water, because the protein in the meat remains on the cutting board and solidifies when heated, making it difficult to wash. Hang to dry after washing. After the cutting board has been used for a period of time, the wood chips on the cutting board can be scraped with a kitchen knife, or the woodworking planer can be used to completely remove the dirt on the cutting board, and the cutting board can be kept flat and easy to use.
3. Reasons for separating raw and cooked food: Livestock, poultry and aquatic products directly contaminate cooked meat and cold dishes, or refrigerated food is not divided into raw and cooked, meat and vegetable, which is an important cause of food poisoning in restaurants, collective canteens and families. Because raw food contains many pathogenic bacteria or parasite eggs. According to data reports, 30% of pigs, cattle and mutton have genitals; 79% of fruits and vegetables have intestinal bacteria such as Escherichia coli, and 81% have Ascaris eggs. In the processing of these foods, bacteria or parasite eggs will inevitably contaminate the utensils. If these utensils are used to process and store cooked food, then the bacteria and worm eggs will contaminate the cooked food, and food may occur after people eat it. Poisoning or parasitic diseases. Utensils for raw and cooked food, including kitchen knives, cutting boards, baskets and tableware, etc., must be equipped with two sets, which should be used separately according to raw and cooked food. Some families do not prepare two sets of food utensils, but they should wash the utensils or sterilize them with boiling water after processing and packing the raw food, and then pack the cooked food.
